Okay, I was late to jump on the quinoa (pronounced keen-wah) bandwagon, but as I try to reduce the amount of meat in my diet and increase my fiber I have become a quinoa junkie. Here are a few of my favorite recipes using this super-food, which is high in protein, essential amino-acids, fiber, iron, phosphorus, magnesium, and iron.
All the recipes below have been tried and tested by myself or a RebelMom reader. They don’t require expensive ingredients or take more than 30 minutes.

Double Broccoli Quinoa from Cookbooks 101 – RebelMom Pick!
My daughter loves this for lunch. I also serve this like a risotto with grilled asparagus and red peppers. Sprinkle lemon juice on the veggies and serve with shaved parmesan.

My brother-in-law’s mom made something similar, except she added mung bean sprouts, chopped red pepper, and zucchini. Eat it alone or as a side – yumm!
Quinoa Tabbouleh from AllRecipes.com – Rebelmom Pick!
I love Tabbouleh and this is a great variation. Stuff the Tabbouleh in a pita and add hummus for a nice little sandwich or serve with grilled chicken. Check out my Best Chicken Marinade Ever!
Fruited Breakfast Quinoa from About.com – Rebelmom Pick!
I eat this for breakfast during cooler months or for dinner when my husband is out of town. It’s filling, delicious, and can be sweetened just with fresh fruit, dried fruit, honey, or agave.
