My roommate in university made this for Canadian Thanksgiving and it was absolutely divine. The vinegar gives it just the right amount of tang and the bacon adds a little smokiness to it.

Chop them fine, toss in olive oil, parmesan cheese, toasted de skinned hazelnuts, salt and pepper. Roast in 350 for 20 min, done!

Again, another recipe that I haven’t tried but saw it listed on several sites, including Rachel Ray’s. The woman who created it won a cooking contest, which is why it has been widely circulated.

Sweet Roasted Rosemary Acorn Squash by Pioneer Woman
The pioneer woman’s recipes are always fabulous. I can’t bare to use an entire stick of butter or 1/2 cup sugar in my version (I use half of the recommended amount and melt beforehand on the stove), but I’m sure hers tastes a lot better. I also add a couple of tablespoons of orange juice and zest a quarter of an orange. This dish absolutely rocks!
