Chicken Tortilla Soup – The Pioneer Woman RebelMom Pick!
This soup is an explosion of flavor and probably one of the best tortilla soup recipes I’ve tasted! I add a squeeze of lime at the end to give it a little zing and a dollop of greek yoghurt. I prefer the tanginess of yoghurt to the creaminess of sour cream.

“I replaced the frozen veggies with bok choy, a can of baby corn, a small can of water chestnuts, celery, onions, sugar snap peas, mushrooms, red peppers and orange peppers (double the amount of the frozen veggies). Saute onions first, then celery, water chestnuts and baby corn, sugar snaps, defrosted shrimp, peppers, and then add the sauce. I prefer to use 4 tbsp black bean sauce along with 3/4 cup teriyaki sauce instead of the soya sauce. Pasta with Fresh Tomato Basil Sauce - Cooking Light RebelMom Pick!
I make this recipe often as it requires few ingredients and my daughter and husband love it. I squeeze half a lemon and throw in 3/4 of can of cannellini beans. If you have left-overs, you can simply squeeze a little more lemon juice on the pasta and microwave. The secret to this recipe is having flavorful tomatoes and premium parmesan.
Grilled Mint Chicken Kebabs & Greek Salad – Epicurious RebelMom Pick!
The chicken kebabs are lovely and light and a nice compliment to the salad. This dinner is satisfying enough for those of you looking for something more substantial but light enough that you don’t feel weighed down.
